Super Easy Chocolate Fudge

I have to agree upon this... life is fun....full of fun and suspense at the same time. It shows you many dramas and you learn so much from it.... this is how I came across to this recipe. Yeah I call it DRAMA... Back in 2003 I made this chocolate fudge in microwave and all glad wrap meleted in chocolate and butter mixture.... and my poor husband got back from work with excitement to eat chocolate fudge and all fudge turned in to a mess, a big guey yucky mess ) : , since then I never made my mind to cook a chocolate fudge ...... but yesterday I made the perfect , super easy-peasy chocolate fudge.... hm yum.... its just delish..I found this recipe on ninemsn.com.au.... beauty ... a real beauty of dark chocolate.... Thanks to ninemsn!!

Super-easy chocolate fudge

Serving size: Serves 10 or more
Cooking time: Less than 15 minutes


INGREDIENTS

450g dark or milk chocolate, chopped
395g can sweetened condensed milk
50g butter

METHOD

  1. Lightly grease a 20cm square cake pan. Line base and sides with baking paper.
  2. Combine all ingredients in a large heatproof bowl over a saucepan of gently simmering water.
  3. Cook, stirring, for 4-5 minutes until smooth.
  4. Spread chocolate mixture into prepared pan. Chill for 3 hours or overnight, until mixture is firm.
  5. Using hot knife, cut fudge into small squares.
  6. Keep fudge chilled in an airtight container.

Banana Yogurt Mini Cupcakes

Hi there bloggy..... it has been a long long time since I have posted anything here... I know ... I was sick with terrible flue, bub was sick and hubib was sick too.... but now I and whole family feel much better...so here is the killer..keeper....kkkkkrazy Banana Yogurt Mini Cupcakes recipe ...got it from Taste.com.au I think!!

Banana yoghurt muffins

Makes
12

Ingredients

1 3/4 cups self-raising flour
1/2 cup caster sugar
1 cup natural yoghurt
1 egg
2/3 cup vegetable oil
2 large bananas, mashed

Method

  1. Preheat oven to 180°C.
  2. Lightly grease a 12-hole, 1/3 cup-capacity muffin pan.
  3. Sift flour and sugar into a bowl.
    Combine yoghurt, egg, oil and 1 cup mashed banana in a large bowl.
  4. Gradually add dry ingredients, stirring until just combined.
    Spoon mixture into muffin holes.
  5. Bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean.
    Stand muffins in pan for 5 minutes.
  6. Turn onto a wire rack to cool completely. Serve warm or cold.

Fish Soup




I never had soup with fish in it...so I was very excited to taste this soup and to my excitment ..this turned out so well... 5 stars goes to this recipe now... I am going to make this again and again!!


Fish Soup


Ingredients


1 whole fish (if not the WA "blue bone”, any large, firm-fleshed white fish)

1 celery stalk,

chopped 3 tomatoes,

1 cup chopped onion

2 lemongrass stalks

Splash soy sauce

Splash white vinegar

1 tbsp turmeric

Water to cover

1 tsp salt

1 tbsp flour

To serve, steamed rice.

Preparation


  1. Remove flesh from fish and chop into chunks.

  2. In a large pot, place cleaned fish head and bones.

  3. Twist lemongrass stalks and tie in a knot.

  4. Beat them to release flavour before adding to the pot.

  5. Add chopped vegetables, soy sauce, vinegar and water to cover.

  6. Add turmeric and salt to taste and cook over moderate heat until fish is cooked.

  7. To thicken the soup, mix a tablespoon of flour with water to a paste then add to the soup.

  8. Serve poured over steamed rice or with rice on the side, as preferred.

Glazed Grilled Fish


Not going to say anything about this dish.....its that yummy!! ;-) ....you got to try it ...its full of flavours ....I got this recipe from quick short recipe book!!


Glazed Grilled Fish


2 tbsp olive oil

2 tbsp lemon juice

2 tbsp fruit chutney

1 tbsp honey

1 tbsp chopped corriander / cilantro

2 cloves garlic, crushed

4 white fish or snapper fillets



  1. Combine oil, lemon juice, fruit chutney, honey, corriander, and crushed garlic in a small jug. Place fish fillets in a large non-metal dish.

  2. Pour oil mixture over fish. Cover and refrigerate for and hour (Note: I didnt do so, all of us were so hungry, so I just left these fishies outside after marination for 15 minutes)

  3. Transfer fish fillets to cold, lightly oiled griller (broiler) tray and cook under high heat, brushing with remaining marinade occasionally, for 4 mintues each side or until tender. Serve with Lemon slices, if desired.


Quick Chirstmas Cake / Pudding



This will save your time in kitchen during Christmas. Christmas pudding / cake is very time consuming I think so here is the recipe for quickest ever Christmas pudding..there must be heaps of recipes on line ..but I got this one from SBS food safari TV show.... I made this when my in laws were here to visit, they were so impressed and I was not sure about what to call this ..so my dearest 'father in law' suggested me the name :


Quickest Ever Christmas Cake / Pudding.... very nice!!


Ingredients


1 loaf day-old bread

375g sugar

2 tbsp custard powder

2 tbsp cornflour

4 tbsp cocoa

2 eggs,beaten (I am going to use 2 tsp egg substitue next time)

500g mixed dried fruit

250g almonds

250g glacé cherries,

halved Vanilla to taste

4 tbsp whisky, brandy or sherry (optional)


Preparation


Preheat oven to 200oC .

Tear bread into small pieces and soak in cold water for 15 minutes until soft.

Place bread in a colander and mash, draining liquid.

Transfer to a large bowl and add sugar, custard powder, cornflour and cocoa.

Stir in beaten eggs and mix well.

Add dried fruit and half of the almonds and glacé cherries.

Add vanilla and whisky.

Pour into a baking dish and decorate with remaining cherries and almonds.

Bake for 45 minutes to 1 hour (check pudding by piercing with a toothpick - should be dry when you take it out).

Can be served warm or cold.

Kadhai Chicken



Hm... mouth watering... yummy..delicious....authentic !! These are the comments from hungry monsters that I have with me .... you may think that this dish must be very hard to make ...but naah..its very easy, when it comes to yummy food..I dont want to take more efforts to cook it..and spend hour and hours in kitchen... I have no time to spend in kitchen after a long busy day at work ...so here is the Kadhai Chicken ....aka ...Indian Style Wok fried Chicken.


(tip: vegetarian ppl can use 500g firm tofu instead of chicken.)


Kadhai Chicken ( Wok fried Chicken)

500 gms of chicken thighs, wahsed and cut it in small bite size pieces
1 red / green capsicum roughly chopped
2 boiled potatoes chopped in cubs
4 large onions finely chopped
4 tomatoes finely chopped
1 1/2 tbsp tumeric
1 tsp red chilli powder
1 tsp whole black pepper
4 small pieces of ginger
7 to 8 cloves of garlic
2 tbsp of oil

1. Make the paste of garlic and ginger
2. Heat the oil in sauce pan
3. Add the Tumeric, chilli powder, pepper and the ginger garlic paste in the oil
4. Stir fry this for 5 minutes
5. Then add the chicken pieces and let it cook for 5 minutes
6. Then add chopped capsicum, potatoes , onions and tomatoes in it and let it cook for 10-15 minutes
7. Serve this with Pulao or naan bread and Raita.

Vegetable Stir Fry with Noodles


All right bloggy..here is another yummy vegetarian dish to put here from my recent favourite vegetarian cook book.... its so yummy that I have addicted to it now..simple to make but still very tasty. But very important tip for those who can not eat peanut butter, please dont use peanut sauce in it ....just use soya sauce and honey. Original recipe dont have soy sauce but you can use it instead of Peanut butter. : )


Vegetable Stir Fry Noodles
Serves 4
Ingredients
250g broad ribbon egg noodles ( I used rice sticks noddles)
2 tbsp Sunflower oil ( I used low fat canola oil)
1 clove garlic, sliced ( I love garlic so I used 2 -3 cloves instead of 1)
2 carrots, thinly sliced diagonally
150g green beans, halved
150g broccoli florets
1 red capsicum, deseeded and cut into matchsticks
4 spring onions, thinly sliced, diagonally
For the sauce:
4 tbsp smooth peanut butter ( you can use crunchy peanut butter for crunch..crunch)
1 tbsp tomato puree
1 tbsp balsamic vinegar
4 tbsp cold water
sea salt and freshly ground black pepper
chopped fresh corriander, to garnish
lime wedges , to serve
Method:
1. Cook the noodles according to the packet instruction, then drain well. Meanwhile, mix together the peanut butter, tomato puree, balsamic vinegar and seasoning with about 4 tbsps of cold water. Set aside
2. Heat the oil in a wok or large frying pan until very hot. Add garlic, carrots and green beans and stir fry for 2 minutes, until lightly coloured. Add the broccoli and stir-fry for 2-3 minutes or until softened. Add the red capsicum and spring onions, then cook for further 1 minute.
3. Add the sauce, 1/2 cup water and the drained noodles in it. Combine well and stir-fry for 4-5 minutes or until everything is hot. Garnish with chopped corriander and serve with freshh lime wedges to squeeze over.
(note: I didnt use lime wedges as I didnt had any ...but next time I am going to try.)

Ganapati Bappa Morya!!


Oh How I miss my home today..its my favourite Shri Ganesha Festival started from today. Whole Thane city in India, celebrates this festival with such a enthusiasm and fun and also devotion...right from the old people to young ones love this Shri Ganesha..... today everyone cheers very loudly to welcome this God of innocence, purity, pure knowledge:
"Ganapati Bappa Morya, Ek Don teen Chaar Ganapati cha Jay Jay kaar, Morya re Bappa Morya re... Ganapati Bappa Morya, Mangalmurti Morya"

Today I pray to shri Ganesha that "I bow to you Shri Ganesha, please give me the innocence, pure knowledge and purity. Give me the healthy life and bless us with your happy eyes.... Jai shree Ganesh ji ki....!!


Here is the reciepe for Microwave style Ukadiche Modak for Shri Ganesh ji!! Its my very first try....


Ukadiche Modak Microwave style


For the Filling (Saran)


Fresh Coconut 2 cups

Jaggery 1 cup

Cinnamon, Nutmeg, Cardamom powder for flavoring / Saffron (Keshar) optional

Mix all above and keep in the microwave for 2min on high power. If some water remains keep it in mocrowave for another min.

For the Outer Covering


Rice Flour 1 cup
Maida=All purpose = Plain flour 1 tblsp
Water 1 cup
Oil / Ghee 1 -2 tblsp
Salt and Sugar a pinch

Mix all the above ingredients very well and microwave it for 2 min on high power. Remove and mix in the food processor with the soft blade untill this forms into a soft dough.
Shape the "modaks", (Note:-before steaming the modaks, dip them in cold water). and steam in the microwave for 3min or traditional way.. is that with boiling water in saucepan covered with strainer which has cotton cloth or muslin cloth init. Put the lead on the strainer, after placing Modak's in it for steaming. For this method steam the Modak's for at least 10 minutes.
Serve hot Modak's to Shri Ganesh...

Delicious Story of 3 Over-riped Pears

I had 3 over riped pears sitting in fruit basket for last week. I didnt wanted them to go in the bin...so I decided to create some yummy desert recipe...very simple and very tasty.... I was thinking to take pic of this ..but once again hungery monsters came in my way...very hard to keep them away.... :)

Roasted Pears with Caramel Sauce---Really Really Yummy!!!!!

Serves 4-5
Cooking time 30 minutes

INGREDIENTS

4 tablespoons butter (I used light butter)
1 cup packed dark brown sugar ( I used 1/2 cup)
4 pears, halved and cored (any pears will do)
1/2 cup sour cream or any fruit flavoured yogurt
1/4 cup coarsely chopped toasted pistachios (or your favorite nuts)

DIRECTIONS:

1. Adjust oven rack to center position and heat oven to 200 degrees.

2. Place butter in a microwave proof bowl , put it in the mcrowave to melt, then add sugar to this melted butter . Give it a mix

3. Take a roast pan or a dish, put the above caramel sauce and place pears in it, cut side down.

4. Bake until tender, about 15 minutes.

5.Remove pan from oven, turn pears over and baste with pan sauce.

6.Return to oven; bake until golden and glossy, about 15 minutes longer.

7.Let cool slightly.

8.Transfer pears to dessert plates or bowls.

9.Top each with dollop of sour cream / fruit yogurt, drizzle with caramel pan sauce, sprinkle with nuts and serve.

As per request from my SIL

Oh well...I have been so busy in doing nothing ..nothin at all... just wasting time... I think.
Then yesterday my SIL Julia, writes me to suggest her some yummy healthy recipe.
So I thought ..what that could be ? Well Julia doesnt eat any meat, no chocolate either just Veges...so I went home with this amazing recipe which I tried ages ago ...very easy to make and very satisfying... guess what there is no meat in it but just eggs ... I hope Julia likes to eat eggs.

Here it goes Julia....I got this recipe from exclusivleyfood.com blog... its not my own creation but you can modify it to taste as original recipe suggested to use 130 g bacon and fry it with onion. But I dont like bacon, so I used grated carrots instead.

Zucchini Slice

550g zucchini
1 -2 medium onion
75g (1 cup lightly packed) grated tasty cheddar cheese (I use low fat one)
3/4 cup Self raising flour
Salt and Pepper
4 Large eggs
83ml (1/3 cup) Oil ( Use peanut oil or any mild flavour one oil could do the job, I used extra light olive oil)


1. Preheat the oven to 180 degree Celsius (160 degrees Celsius fan-forced)


2. Line a n 18cm x 28cm baking dish or slice pan with baking paper

3. Finely chop onion. Heat a heavy-based pan over medium high heat.

4. Fry onion for about six minutes, stirring occasionally, until onion has softened but not browned. Set asid to cool

5. Wash zuccini, remove the ends and finely grate. Squeeze handfuls of grated Zucchini over sink to remove excess liquid. ( this prevents the slice from being too wet.)

6. Combine grated Zucchini, colled onion and cheese, flour, salt and pepper in a large bowl.

7. Beat the eggs and oil together with fork. Add egg and oil mixture to other ingredients and stir to continue.

8. Pout the mixture into baking dish and spread evenly.

9. Bake it for about 45 minutes or until slice is golden brown and firm to the touch.

10. Set aside for five to ten minutes before slicing.

11. Serve with salad.

No Egg No butter Chocolate Chip Cookies


Hello all. I am entering this yummy delish No Egg No Butter Choco Chips cookies recipe...

Other day my bub was sick with flue and was craving for Chocolate chips cookies and luckily I had this recipe handy in my recipe collection.

I am not sure where I have got this from but here how it goes..its just delish...yumm.... good for Vegan ppl's too.


No Egg-No Butter Chocolate Chips Cookies

Ingredients:

2 cups unbleached flour
2 tsps baking powder (AKA Bi-Carb Soda)
1/2 tsp salt
Cinnamon powder to taste (optional - I used it and its really nice)
Chocolate chips (I use dark chocolate chips- the cookies are already sweet, also put in as many as you like)
1 cup raw sugar
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
Baking Paper (Note: original recipe says to use Parchment paper as makes it easier)


Directions:

  1. Make sure all ingredients are at room temperature. It will work if they're not at room temp but it works MUCH better if they are.

  2. Preheat oven to 180 degree C.

  3. In a large bowl mix flour, baking powder, salt, cinnamon (if you choose). Add chips.

  4. Make a well in the center and set aside.

  5. In a medium size bowl mix sugar and oil. Mix it well. Add the vanilla and then add the water. Mix it well. Add the wet to the well in the dry. Mix it well.
    Add more chips if you need to.

  6. Spoon onto ungreased cookie sheets (or cookie sheets with parchment paper on them).

  7. The shape that you put them on the sheet in is the shape they will basically come out in, if you put them in a round shape, they come out basically round, if you put them in a flatter more traditional shape, they'll come out that way.

  8. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets. (top to bottom,and 180 degree rotation) Bake another 4 to 5 minutes and check them, cook for increments of 2 minutes after as needed. It took around 20 minutes for me to bake this cookies. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. Store them in airtight container.

(Note: I only used 3/4 cup sugar, also I used 1 and 1/2 tsp of egg substitue, I know its a egg free cookies but I had an egg substitue sitting in pantry so wanted to use it and it worked)
